I love to have a hearty warm breakfast in the mornings. What I don’t love is pulling out the mixer, the electric griddle and everything else on a busy morning. So usually on the weekends or when I have the extra time, I make up a double batch of pancakes. I store the extras in the freezer to use throughout the week. On a busy morning, voila, we have hot yummy pancakes with the same amount of mess it takes to pourĀ a bowl of cereal!
The first time I froze the extra pancakes, I had a problem with them sticking together and breaking apart when we went to use them. So I began freezing them like this on a cookie sheet:
I make sure that they are fully cooled, then I arrange them on the cookie sheet and pop it in my freezer for a little bit. They don’t even have to be fully frozen before you can place them in a bag, or a covered container, like this:
Here is my very favorite pancake recipe, from Dining On A Dime Cookbook. This is for a single batch. If you are doubling the mix, I only use 8 tsp of baking powder:
2 cups of flour
2Tbsp sugar
5tsp of baking powder (use 8 tsp if doubling)
1/4 tsp of salt
2 eggs
1 1/2 cups of milk
1/4 cup vegetable oil
Mix dry ingredients then combine the wet. Mix until just moistened. This mix is lumpy and very thick. Using a ladle, put about 1/2 cup of mix on a hot griddle or frying pan. If you are storing them, cool completely before place on a cookie sheet in the freezer, or it will stick to your cookie sheet and its just not good to put warm food inĀ your freezer!

I made a bunch too and didnt freeze them and they all stuck together !
I heard when you freeze them you can put wax paper in between layers so they dont stick, but from what I read you dont have to even do that ! Great tip
Great tip. I’ll have to do this the next time I make pancakes.
Thanks for the great tip. I’ll have to try it this week!
Thank you for sharing! I love pancakes. I tend to make waffles these days, but will try your pancakes since they freeze well. I’ll let you know how it goes!
I have never thought about making an extra batch of pancakes and the freezing them. I can definitely do this during the week to save me time during the weekend.
I saw your link on BD, and I’m glad I stopped by. What a smart idea to make pancakes and freeze them for later! Thanks for the tip.
Thanks for the recipe and great food storage tip.
Oh, this is great! I’m excited to try freezing our leftover pancakes (we don’t have kids yet!) since they get all floppy when we store them in the fridge. And who wouldn’t love to have pancakes instead of cold cereal on a busy morning? Thanks!
I do this all the time!! It’s perfect for the kiddos to take out of the freezer, heat-and-eat!
I think this is the first time I’ve visited your blog. I love it! Gonna add you to my reader! Thanks for the visit.
Great idea! I love pancakes and your suggestion would be a great way to have a nice, hearty breakfast in just a short amount of time. Thanks for sharing! Lana
What a great tip about freezing them. I always end up feeding some to the dogs…shhh…don’t tell anyone that. I’m sure that’s not good!

My husband makes the best pancakes and we love to freeze both them and waffles. I’ll have to print your recipe so he can try this homemade recipe.
Thanks,
Ginger
i do this, too. isn’t it great to be able to give the kiddos a nice hot homemade breakfast without all the fuss every morning?
They looks so good and fluffy! I grabbed that recipe…thanks for sharing!
