Homemade Hot Pockets

I mentioned I was making homemade hot pockets last week and had many of you request the recipe, so here goes!

When I found packages of lunch meat marked down to .75 I snagged them up and figured I would decide later what to do with it all. I don’t like my family to eat too much lunch meat, and this stuff was near expiration. I wasn’t sure that lunch meat can be frozen as is (can it?), so I got creative and made Homemade Hot Pockets!

I started out by making my favorite bread dough in my bread machine. Any bread dough will do.  Once the dough was done, I got to work.

I rolled out the dough into 3 sections like this:

I chopped up the lunch meat a little and sprinkled cheese over them (by the way, this is a great way to use up those bags of cheese in the fridge that have only a few teaspoons left in them but you can’t bear to throw them out)

I divided the dough using a pizza cutter

And rolled them up.  Make sure you seal the seams tightly so they don’t unroll while rising again.

Let them rise a second time, which will take much longer than the usual 30 minutes and they will not rise as much due to the filling.

Then bake at 350 until browned, about 20-30 minutes.

Eat right away, or cool and freeze them. From the freezer, I popped them into the oven until warm.

One batch of bread dough made 12  hot pockets. You can  make them larger or smaller depending upon your fillings and how many you want to yield.

You can use a variety of fillings in this and are a great way to clean out the fridge. Have some leftover cheese and pepperoni? Have just a bunch of cheeses hanging around? How about a little bit of fried up hamburger? Some leftover chicken? Anything goes,  really!

    Thanks for sharing the recipe. These look so much tastier than the ones at the store.

    I used to buy a package of sandwich meat and freeze half of it in a freezer bag all the time. It always seemed to do fine.

    These sound really good! I’ve frozen lunch meat for years and have never had problems. It’s a great way to stock up when it’s on sale.

    Yummy ! I have wanted to make some for a long time but forgot about it. Thanks for the GREAT reminder. This really is a good way to spread out the makings and no one notices it. I have done something similar with calazones. I have a VERY fast bread dough recipe and it works GREAT.

    Oh Stephanie, those look so good! My mind is swirling with ideas for different fillings! :) I’ve often seen lunch meat marked down but thought, well I couldn’t use it all up before it went bad, so I passed it up. Won’t do that again! ;) Thanks big ol’ bunches!

    Hi Stephanie. I tried to return your email about the texture of frozen lunchmeat but I got an email back saying the account was disabled. Soooo, I’ll give my answer here. The texture stays the same. I take it out a full day in advance to make sure it’s fully thawed. And, I have some picky eaters, so it must taste ok. :)

    yes.
    those are exactly the kind of hot pockets I’ve been looking for can’t wait to try them out..=]
    however i got a few questions before i can do that.,

    1-does it have the texture of a freshly baked roll or is it a little dryer.

    2-is there a way i can get that kind of dough “without a dough maker” as i don’t have one, or do i absolutely need one to get the dough in that consistency.

    my kitchen is very austere. and that’s the way i plan to keep it .
    (well actually it’s my wallet that plans to keep it that way.so..)

    You can use any kind of dough to make the hot pockets. I just use my bread machine because it is more convenient for me.

    I made these today using my favorite pizza dough from the bread machine. For the filling i used pepperoni, mozzarella and pizza sauce. They turned out delicious and so much better than store bought. Thanks a bunch!
