Budget Meal: Chicken N’ Gravy With Biscuits

Sometimes the simplest meals are the ones my family loves the best! Using some leftover chicken and gravy from another meal, peas from the freezer, and some homemade biscuits, and we had this satisfying and inexpensive meal!

I have never made homemade biscuits before. Why? I don’t know, I guess I had this false impression that they were difficult. Nothing could be further from the truth. These biscuits were so easy and delicious I almost ate them all myself! In a matter of 20 minutes I had them in the oven, and 10 minutes later they were done!

Homemade Biscuits (from my favorite Betty Crocker Cookbook)

3 c. All purpose flour

4tsp baking powder

1 TBSP sugar

1 tsp salt

3/4 tsp Cream of tartar

3/4 butter

1 cup of milk

Stir together dry ingredients and cut in butter. Add milk into the flour mixture at once and stir until just moistened.

Turn out dough onto a lightly floured surface and knead just until dough holds together.  Roll out until 3/4 inch thick and cut with a biscuit cutter (I used a glass!).

Place biscuits 1 inch apart onto a cookie sheet and bake for 450 degrees F for 10-12 minutes until golden brown.  Serve immediately.

While the biscuits were cooking, I put leftover chicken cut up into a pan:

Added some peas and gravy, sprinkled in some salt and pepper:

Heat until warmed, take  your biscuits out of the oven and spoon the chicken mixture over biscuits:

Poured a nice tall glass of homemade sweet tea:

And voila! Dinner is ready in less than 20 minutes!

Well, I finally got around to trying the biscuit recipe and OH MY were they good. I had to improvise though because I didn’t have enough AP Flour, so used 1 cup AP and 2 cups King Arthur White-Wheat Flour. I also used buttermilk since I had some that needed to be used up. Definitely a keeper–so glad I found this site!

Oh, yeah! Dh is always asking “is this made from leftovers?” LOL! :D Last night I made fried rice and put pieces of our pork roast from last week in. :D I might have to change my Thursday meal with leftover chicken to this on as it sounds scrumptious!!
