Church Lady Coffee Cake Recipe

Coffee cake

Every church has one. Or they should.

She sends you cards of encouragement to remind  you that she’s praying for you, and they arrive in the mail exactly when you need them.

The one who will come across five aisles in the grocery store during the busiest time of day to give you a hug.

And the one who makes you yummy goodies to cheer you up when she knows that you have had a rough day.

This recipe is from one of those sweet ladies that makes being a church member great.

Years after we left that church, I still remembered her amazing coffee cake.  I finally got the recipe off of her daughter in law, and made several copies so I make sure I never lose it.  It’s that good.

I didn’t say it was good for you, but it’s so delicious you can do it just this once!

It didn’t come with a name, so I named it Church Lady Coffee Cake. For all of those church ladies. You know who you are. :)

Church Lady Coffee Cake Recipe

1 yellow cake mix

1 small  pkg. lemon instant pudding

1/2c. oil

8 oz sour cream

3 large eggs

Mix ingredients together until they are nice and creamy. Batter will be thick.

For the filling, in a small bowl mix;

1/4c brown sugar

1 tsp cinnamon

3/4 chocolate chips

1/2 c walnuts chopped.

Grease a bundt pan well and spoon half the batter in. Add filling and cover with remaining batter.

Cook at 350 for 40 minutes or so.

When cool, sprinkle with powdered sugar. Eat while still slightly warm, yum!

I do believe when I am in heaven, food will taste this good.

I love the walnuts in this cake filling and the moistness added from the yellow pudding. It’a a great way to not use butter. I am sure it tasted as good as it looks – your picture is beautiful.
