Flu Fighter Muffins

These muffins are packed with lots of yummy immune system building goodies, and they taste good too. Serve ‘em up with a green smoothie and you have the ingredients for a mean, flu fighting, immune system machine. They also freeze well so I have been making up double batches and keeping them on hand for  a fast and healthy breakfast or snack.

Flu Fighter Muffins

1 1/2 cups all purpose flour

1/2 cup whole wheat flour

3/4 c. sugar

2 tsp. baking soda

2 tsp. ground cinnamon

1/4 tsp salt

2 cups shredded carrots

1/2 c. raisins or other dried frut

1/2 c. chopped walnuts

1/2 c. unsweetened flaked coconut

1 apple peeled, cored, shredded

3 eggs

1 cup of applesauce

2 tsp. vanilla extract

Preheat oven to 350 and grease a muffin tin.

Stir together eggs, applesauce and vanilla.

Mix together flour, sugar, baking soda cinnamon,  and salt.  Once mixed, add the carrots, raising, nuts, coconut and apple.  Fold into the egg mixture and stir until just moistened.

Scoop batter into prepared muffin cups and bake for 20 minutes.
