The link is down for the Chicken and Dumplings over at All Recipes, but I have to wonder if you are making the same one I just made!! If you want to take a look head over and see the additions/changes I made. I originally made it exactly as the recipe called for but found that my boys like it better with quite a few changes!

Wish I had a clue for you on the beer – I never have beer in the house and I normally pass up recipes that have beer involved just because I don’t want to buy any (it’d just go to waste!!)

I think the subsitution would depend on the purpose of the beer in the recipe–moisture and flavor could be substituted like the previous commenters have mentioned, but I don’t think you could subsitute in something like beer bread, for instance, where the yeast is the important part! :0)

For light beers, substitute chicken broth, ginger ale or white grape juice. For heavier beers, use a stronger beef, chicken or mushroom broth or stock. Non-alcoholic beers may also be substituted.

I know people who use coke or 7-up instead of beer when they’re gdoing “Beer Can Chicken on the Grill. Maybe they would work in your recipes too. I think the beer is primarily for moisture. It has a lot of sugar too. So maybe that’s why sodas will substitute. Worth a try?
