Pumpkin Whoopie Pies With Cream Cheese Filling
These whoopie pies are a fall spin on the traditional chocolate version. Moist and delicious and perfect with a cup of hot chocolate!
Pumpkin Whoopie Pies
2 c. brown sugar
1 15 oz can of pumpkin
2 eggs
1 c. vegetable oil
3 c. flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 ½ TBSP. cinnamon
1 tsp ginger
1 tsp ground cloves
1 tsp vanilla
Preheat oven to 350 degrees
Cream together sugar, oil, pumpkin, vanilla and eggs.
Sift all dry ingredients together, and add to wet mixture. Mix well.
Using a spoon, drop mixture onto a greased cookie sheet. I use an ice cream scoop because it makes them even and gives them a nice little rounded top. Make sure you have an equal amount of tops and bottoms. Bake 10-12 minutes. Let whoopie pies cool.
Meanwhile, make the filling:
1 pkg of cream cheese, softened to room temperature
2-3 cups of confectionary sugar (depending on how sweet you like it)
Vanilla to taste (I start with one tsp. but don’t add more than a TBSP)
Once they are cool, lay out the bottoms and put equal amounts of the cream cheese filling on each. Add the tops, and enjoy!
My friend brought these over to share one day, and after begging for the recipe she finally gave it to me. I am actually not a fan of whoopie pies, but these are amazingly delicious. The cream cheese filling is the perfect complement to the yummy pumpkin. They have become a fall tradition at our house. Hope you like them!

Hi Stephanie!

I have thought about your mission several times this week – I blog and am a stay-at-home wife and dog mom to our 4 kids. Too long of a story for here, but it was my decision to stay at home. The job I resigned from even called me and asked me to come back.
I run our house and take care of just about everything so my husband can work and not worry about anything here. Somedays I wonder how two people can dirty the amount of clothes we do, how we dirty so many dishes, how we can have to juggle so much. And those are the moments when I’ve thought of you, and the High and Noble calling. Thank you. You helped me remember.
